Ingredients:

  • 1/4 cup sea salt

  • 2 tablespoons Korean red pepper flakes (gochugaru)

  1. Cut the cabbage into quarters and soak it in salted water for 1–2 hours. Rinse and drain well.

  3. Add carrots and green onions into the paste, then mix with the drained cabbage thoroughly.
  4. Pack the mixture into a clean jar, press it down to remove air pockets.
  5. Leave the jar at room temperature for 1–2 days to ferment, then store it in the fridge.
